With a haul like that yesterday, there was no keeping Pete and Blair out of the water this morning. Fish count for the 2 days: 2 Puppy Drum, 10 Flounder, 70+ Trout!
We’ll be eating good this week….Blair calls it Living Off the Land. Here’s another one of our favorite recipies:
Beer Battered Fish Bites
Inspired by John’s Beach Shack in Kitty Hawk
Any sturdy white fish
1 Tbs. grill seasoning
1 Tsp. nutmeg
Oil for frying
Heat oil in a skillet. Pour pancake mix and spices in a bowl. Add beer. You’re looking for the consistency of a pancake batter.
Tip: if it’s too thick, add more beer….if it’s too thin, add more pancake mix.
Cut fish into bites (you can keep in filets as well if you want to serve it as an entrée).
Dip fish in batter and shake off excess. Fry until golden brown.
Serve with tarter sauce.
