A New Rockfish Recipe
I love to cook in my spare time and often find myself swapping recipes with fellow foodies. I learned a new recipe last weekend that will go in my arsenal forever!
We headed north to Maryland to Larry & Diann’s home on Prospect Bay and then to Baltimore for the Raven’s game. Larry and Diann are great family friends and the best hosts in the world. Larry took the boys fishing while the ladies stayed warm inside. On their trip they landed a hog of a Rockfish!
Larry & Di told us about this Rockfish recipe they had recently tried where you boil chunks of the fish in sugar water?? Sounded a little weird to me, but worth a try.
Skeptical as I was, I tried the fish and was truly shocked to find that it tasted just like lobster! Apparently, the sugar in the water has a chemical reaction with the meat where it tightens it up and gives it the consistency of lobster or snow crab meat. Dipped in butter, you would never know the difference.
I challenge you to try this recipe:
Poor Man’s Lobster
- 1/2 gallon of boiling water
- 1 cup of sugar
- Add large rockfish chunks
- Boil for about 3-4 minutes
- Sprinkle with Old Bay and dip in butter
It still seems like the oddest thing to me, but I’m a believer!
